What to expect

Select the artisanal-vintner flight you fancy: will it be an organic/biodynamic/natural wine tasting or an orange wine tasting? As Giulio will explain, organic wines come from grapes grown sans chemicals. Biodynamic wines, which have even fewer sulfites, follow a growing, harvesting and aging schedule based on the cycle of the moon. Natural wines have nothing added nor subtracted: “These wines are unfiltered, unclear, more wild style,” Giulio says. “They respect more the soil and the terroir.” As for orange wines, well, they can be the funkiest—skins-on fermentation, white wines made in the style of reds, copper colors and flavors that change from sip to sip. Sample some hard-to-get small-batch wines, snack on About Eatery’s paired canapes and impressive cheese selection, and let Giulio take you on an 8,000-year journey with some of today’s most interesting winemakers.

He is a passionate storyteller who is also a certified sommelier from the Italian Sommelier Association (AIS) and a lecturer at Chulalongkorn University.
